Ro-tel Cheese Dip
1 can (10 oz) Ro-tel tomatoes, undrained
1 lb Velveeta cheese
1 lb breakfast sausage (optional)
Cut Velveeta cheese into chunks. Combine cheese and undrained Ro-tel tomatoes. Cover and heat in microwave on high for about 5 minutes or until cheese is melted. Stir after 3 minutes. If using a crockpot, set the heat to medium. Stir frequently until cheese is melted. Serve warm with crackers or chips.
VARIATION: Brown a roll of breakfast sausage, drain, and add to cheese and tomatoes.
