2 lbs chicken (1 whole chicken or 4 chicken breasts)
10 corn tortillas, quartered
1 large green bell pepper, diced
1 large onion, diced
1 can cream of chicken soup (Healthy Request or reg.)
1 can cream of mushroom soup (Healthy Request or reg.)
½ lb grated cheddar cheese
1 can Ro-Tel tomatoes (drained)
Pre-heat oven to 350° F.
In a pot, salt and pepper the chicken. Add 2 cups or so of water and boil about 20 minutes or until chicken is tender and cooked.
Take out chicken, let cool, and cut into bite-sized pieces.
Spray a 9 x 13 in. pan with PAM.
Drop tortillas into the boiling broth from chicken and line pan.
Put the chicken on top of tortilla lining.
Add other ingredients in order. Garnish the top with Rotel and some green pepper.
Bake in oven for 30-40 minutes.
