Strawberry Cake
1 cup thawed, frozen strawberries, undrained
2 eggs
1/2 cup water
1/2 cup vegetable oil
1 pkg (4 oz) strawberry jello
1 pkg white cake mix
Combine all the ingredients and beat until smooth. Pour into 2 greased and floured wax paper lined 8 inch cake pans or 1 prepared 9 x 13 inch oblong pan. Bake at 350 °F for
30 -35 minutes. Cool and frost with strawberry icing.
Strawberry Icing
3 Tbsp butter, softened
2 cups powdered sugar
½ tsp vanilla
½ cup frozen strawberries, drained
Strawberry juice as needed
1-2 drops red food coloring (optional)
Blend butter and sugar. Stir in vanilla and strawberries. Add small amounts of strawberry juice and beat until icing is smooth and of spreading consistency. Add red food coloring if more color is desired.
