Brittle Recipes

Peanut Brittle

3 cups sugar
1&1/2 cup white Karo syrup
1&1/3 cup water
2 cups raw peanuts
1 Tbsp butter or margarine
1 tsp soda
1 tsp vanilla

Stir sugar, syrup, and water in a deep kettle (large heavy pot) over medium heat until it boils. Cook until a drop cracks in cold water; then drop in peanuts and butter. Begin stirring on stove and continue until the peanuts smell roasted. Remove from heat and add soda and vanilla. (Mix will foam up.) Stir until blended. Turn out onto a buttered surface and spread out thin. Break into pieces when cooled.

Pecan Brittle

1 tsp soda
1 tsp vanilla
