Queso Chicken

2 chicken breasts
2 Tbsp butter
salt
pepper
garlic salt
1 small-medium tomato, chopped
2 green onions, chopped
1cup queso or Ro-tel cheese dip
1 pkg Success brown rice

Start the rice cooking. Season the chicken breasts with salt, pepper, and garlic salt to taste. Dot the chicken with butter and grill the seasoned chicken breasts eight to ten minutes on each side. (I use a small stove top grill.) Chop the tomato and the green onions. When the rice and chicken are cooked, place the rice on a plate. Put the chicken breasts on top of the rice. Sprinkle 2/3 of the chopped tomato and the chopped onions on top. Pour the hot queso over the chicken, vegetables, and rice. Top with the rest of the tomatoes and onions.
