Baked Rice (Mary Michalek Skypala)
1 cup rice
2 cup water
1 Tbsp margarine
1 tsp. salt
1/2 cup margarine
1/2 cup sugar
1 can crushed pineapple
2 eggs, beaten
3/4 cup milk
Bring the rice, water, 1 tablespoon margarine and salt to a boil. Cover and simmer 15 minutes. Stir in margarine and sugar. Cool. Add pineapple, eggs and milk. Bake for 1 hour in a well-greased dish at 350°.
